Green Mole celebrates the connection between cuisine and nature. Inspired by the abundance of the Oaxacan fields, it brings together aromatic herbs, seeds, and fresh chiles in a preparation that symbolizes fertility, renewal, and gratitude for the fruits of the earth. Black Mole – The Culmination
Black Mole is the deepest expression of Oaxacan cuisine. Born from patience and ancestral knowledge, it combines toasted chiles, spices, seeds, and chocolate in a preparation that can take days. In Oaxacan communities, it is served at weddings, religious stewardships, and major celebrations, where it represents respect, abundance, and unity. Yellow Mole – Living Earth
White Mole, also known as Wedding Mole, is one of the most refined expressions of Mexico’s ceremonial cuisine.
